Caramel Apple Dip (10-Minute Cream Cheese Recipe)

59

OK so caramel apple dip is my go-to when I have like ten minutes and no energy left, and every time, it’s the first bowl on the table that gets scraped clean. Cream cheese beaten with brown sugar, smoothed into a shallow dish, caramel sauce poured over, a handful of toffee bits on top. Then you dunk apple slices. That’s literally it, no stove, no oven, one bowl and a beater to wash.

Apparently I’m not the only one obsessed. Pinterest searches in the US for “carmel apple dip recipe” (yes, most people type it like that, I do too half the time) are up over 10,000% compared to last year, and at the end of September 2026 they were still jumping about 80% a week.

Ingredients

Cream cheese layer
  • 8 oz cream cheese full fat, softened
  • 1/2 cup light brown sugar packed
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon optional
Toppings
  • 1/2 cup thick caramel sauce store-bought or homemade
  • 1/2 cup toffee bits such as Heath
  • 1 pinch flaky sea salt optional
For dipping
  • 4 crisp apples Honeycrisp, Granny Smith or Pink Lady
  • 2 tsp kosher salt for the anti-browning soak
  • 4 cups water room temperature

Equipment

  • Hand mixer
  • Shallow 8 or 9 inch serving dish

Method

Make the dip
  1. Beat the softened cream cheese with a hand mixer for 1 minute until smooth.
  2. Add the brown sugar, vanilla and cinnamon and beat another 2 minutes, until fluffy and no longer gritty.
  3. Spread the mixture into a shallow serving dish, making a slight dip in the center.
  4. Spoon the caramel over the top and spread it almost to the edges. Sprinkle with toffee bits and a pinch of flaky salt.
Prep the apples
  1. Stir the kosher salt into the water until dissolved.
  2. Core and slice the apples, then soak the slices in the salt water for 5 minutes.
  3. Drain, rinse briefly under cold water and pat dry. Serve right away with the dip.

Notes

Make ahead: make the cream cheese layer up to 2 days ahead and keep it covered in the fridge. Add the caramel and toffee right before serving so the toffee stays crunchy.
Food safety: do not leave the dip at room temperature for more than 2 hours. Set the dish in a bowl of ice for a long party.
Storage: covered in the fridge, leftovers keep 3 to 4 days.

Why I always make the layered kind

So there are basically two versions floating around. One where you stir everything together into a sort of beige sweet spread, and one where you keep it in layers, fluffy cream cheese on the bottom, a shiny sheet of caramel on top, crunchy stuff over that. I’m firmly team layers.

Every scoop gets a little tang, a little gooey caramel and some crunch, and it looks so much nicer sitting on the table. Plus the brown sugar in the base kind of tastes like caramel all by itself, so even the last scrapings at the bottom of the dish are good. My brother-in-law literally eats those with a spoon.

Getting the cream cheese base smooth

Two things matter here and I learned both the annoying way. First, your cream cheese has to be properly soft, like leave it out an hour soft, or cube it and zap it 15 seconds in the microwave. If it’s cold you get these tiny lumps that never beat out no matter how long you go.

The other thing, don’t stop beating too soon once the brown sugar’s in. Give it two full minutes. I do a little finger test, rub a bit between thumb and finger, gritty means keep going. Oh and full fat cream cheese please, I tried light once trying to be healthy and it turned into a puddle the second the caramel touched it.

Which caramel to use

Honestly whatever’s easiest for you. Jarred caramel sauce works great as long as it’s the thick ice cream topping kind, not the thin coffee syrup that just soaks in and disappears. If you want it to set up firmer, more like the coating on an actual caramel apple, melt about 20 unwrapped soft caramels with a couple tablespoons of cream in the microwave, 20 seconds at a time, stirring in between. And if you’ve got a favorite homemade salted caramel, go for it, just let it cool to room temp first so it doesn’t melt the base into soup.

Keeping the apples from going brown

Lemon juice does work, but then every single slice tastes like lemon, which kind of fights the caramel. Salt water is better and it sounds weird but trust me. The Kitchn ran a side-by-side test (updated in 2026) and a five minute soak in water with half a teaspoon of kosher salt per cup kept slices white for 12 hours at room temperature. Give them a quick rinse after and you can’t taste the salt at all.

For dipping I like a mix, Honeycrisp or Pink Lady for sweet and crunchy, Granny Smith for that sour snap against the sweet dip. Green and red together on the board looks really pretty too, and people get to pick.

Turning it into a caramel apple bar

Fall party caramel apple bar with dip, apple slices, pretzels and topping bowls

Caramel apple bars are a big party thing this fall, Pinterest searches for “caramel apple bar ideas” are up something like 7,500% from last year. And this dip is the lazy way to do one, no melting pots of caramel, no wrestling with sticks.

I put the dip right in the middle of a big board and pile stuff around it, apple slices, pretzel rods, graham crackers, vanilla wafers. Then little bowls of extras so everyone can sprinkle their own, mini chocolate chips, chopped peanuts, crushed Oreos, sprinkles, plus a small jar of extra caramel because someone always asks. For Halloween I add candy eyes and orange sprinkles and the kids lose their minds. If you need savory stuff for the same table, grab a couple ideas from my Halloween appetizer ideas.

A few fun twists

In October I sometimes beat a couple tablespoons of pumpkin puree and half a teaspoon of pumpkin pie spice into the base, which makes it taste like pumpkin cheesecake. A spoonful or two of creamy peanut butter in the cream cheese with chopped peanuts on top is very good too, kind of like those caramel apples from the fair. For a lighter one, swap half the cream cheese for thick Greek yogurt, it’s tangier and softer so eat it within a few hours. And when I’m feeling extra, chopped Snickers instead of toffee. Nobody has ever complained.

Serving it and storing it

Food safety wise, cream cheese stuff shouldn’t hang out on the counter more than about two hours (that’s what FoodSafety.gov says for perishables). At a long party I nest the dish in a bigger bowl full of ice, or I only put half out and keep the other half chilling to swap in.

If there’s any left, it’ll be fine in the fridge for three or four days with a lid on, though the toffee goes soft, so throw a fresh handful on top next time.

More apple stuff to make

Got a bag of apples left over? Make my apple crumble with oats, or go full caramel apple mode with the caramel apple pie dump cake. On the savory side, the spiced apple chutney is so good on a cheese board.

Stuff people ask me about this dip

Can I make it ahead of time?

Sure. The cream cheese layer is happy in the fridge for a couple days. I wait to add the caramel and toffee till right before people show up, otherwise the toffee goes chewy.

What else can you dip besides apples?

Pretty much anything. Pretzels are my favorite, but graham crackers, vanilla wafers, pear slices, strawberries, bananas and animal crackers all disappear just as fast.

Why did mine turn out runny?

Usually it’s light cream cheese, or the caramel was still warm when it went on. Stick it in the fridge for half an hour and it firms right back up.

Can you freeze it?

I wouldn’t. Cream cheese goes grainy after it thaws and the caramel kind of weeps. It’s ten minutes to make fresh anyway.

Is it carmel or caramel?

Same thing! “Caramel” is the dictionary spelling, but loads of Americans say “carmel,” so that’s how a lot of people end up searching for it.

One last tip: spread the caramel with the back of a warm spoon. I dip mine in hot water, wipe it dry, and the caramel just glides over the cream cheese without tearing it up.
