Okay, so if you grew up in Hawaii, you already know this pumpkin crunch recipe. It’s the pan that shows up at every Thanksgiving potluck, office party and church lunch from October to New Year’s, cut into little squares and tucked into foil cupcake liners. If you didn’t grow up there? Picture pumpkin pie filling on the bottom, a buttery, crunchy cake-and-walnut layer on top, and a cloud of whipped cream cheese frosting over everything. Yeah. It’s that good.
The best part? It’s lazy. One bowl for the pumpkin stuff, into a 9×13 it goes, then a whole box of dry yellow cake mix gets dumped on top (yes, dry), nuts, melted butter, and into a 350°F oven for roughly an hour. No mixer. No pie crust. That’s the whole thing.
People outside the islands are catching on, too. On Google Trends, US searches for “pumpkin crunch recipe hawaii” are up about 50% over the past year. Thanksgiving’s on Thursday, November 26, so it’s good timing. Want more ideas for the table? Every pumpkin recipe we’ve got is on our pumpkin recipes page.

What Is Hawaiian Pumpkin Crunch?
Think of it as pumpkin pie’s laid-back island cousin. It’s basically a dump cake, the old American trick where you scatter dry cake mix over a filling, pour butter on top and let the oven sort it out. Except here the filling is a spiced pumpkin custard instead of canned fruit.
Nobody really knows who started the Hawaii version. A lot of local families trace their copy back to an auntie, a church cookbook, or Sam Choy, the Hawaii chef whose pumpkin crunch has been shared on local TV for years. Hawaii Magazine even joked that everybody’s mom there makes it. What makes it “Hawaii style” is mostly the finish: a thick whipped cream cheese frosting and a generous handful of nuts.

Pumpkin Crunch Recipe Ingredients
Three little groups of stuff, and you probably have half of it already. The exact cups and grams are in the recipe card. Here’s the short version with swaps:
| Ingredient | What it does | Swap |
|---|---|---|
| Canned pumpkin puree (15 oz) | The custard base | 1 3/4 cups thick homemade puree |
| Evaporated milk (12 oz) | Creamy, firm set | 1 1/2 cups half-and-half |
| Sugar, eggs, spices | Sweet, set, warm | 2 tsp pumpkin pie spice for the spices |
| Yellow cake mix (one box, dry) | The crunchy top | Butter or spice cake mix |
| Chopped walnuts | Crunch | Pecans, or macadamias for extra island vibes |
| Melted butter (2 sticks) | Turns the dry mix golden | Salted butter works, skip the pinch of salt |
| Cream cheese, powdered sugar, whipped topping | The frosting | Real whipped cream instead of the tub |
Heads-up on the can, because everybody grabs the wrong one once. You want the one that says 100% pumpkin. The “pumpkin pie mix” can right next to it is already sweetened and spiced, so your crunch ends up tasting like candy.

How the Layers Come Together
The full steps live in the card below, but here’s how it actually goes.
Line your 9×13 pan with parchment, leaving some hanging over the long sides. Seriously, do it. You’ll want those handles later. Then whisk the pumpkin, evaporated milk, sugar, eggs and spices until smooth and pour it in. It’s thin, kind of like pie filling. That’s right.
Now the weird part. Sprinkle the dry cake mix straight over the pumpkin. Don’t stir! Shake it around till the orange is all covered up, then kinda pat it down with your palm. Next, scatter the nuts over that. Then slowly drizzle the melted butter over everything, trying to wet as much of the powder as you can. A few dry spots are okay, they mostly disappear in the oven.
The Butter Trick
Dry white patches on top after baking are the classic pumpkin crunch fail. So go slow with the butter. Spoon it on in rows, back and forth. Halfway through baking, peek. See a pale dry patch? Little dab of butter. Fixed.
RECIPE

Hawaiian Pumpkin Crunch
Ingredients
- 1 can pumpkin puree 15 oz / 425 g, not pumpkin pie mix
- 1 can evaporated milk 12 oz / 354 ml
- 1 cup granulated sugar 200 g
- 3 large eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 box yellow cake mix 15.25 oz / 432 g, dry
- 1 cup walnuts 115 g, chopped (or pecans or macadamias)
- 1 cup unsalted butter 226 g / 2 sticks, melted
- 8 oz cream cheese 227 g, softened, block style
- 1/2 cup powdered sugar 60 g
- 1 tsp vanilla extract
- 1 cup whipped topping 75 g, thawed (or 3/4 cup heavy cream, whipped)
- 1/4 cup walnuts 30 g, chopped, for topping
Method
- Heat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the long sides.

- In a large bowl, whisk the pumpkin, evaporated milk, sugar, eggs, cinnamon, ginger, nutmeg and salt until smooth. Pour into the lined pan.

- Sprinkle the dry cake mix evenly over the pumpkin layer without stirring, then gently pat it flat. Scatter the chopped walnuts over the top.

- Slowly drizzle the melted butter over the cake mix in rows, covering as much of the dry mix as possible.

- Bake 50 to 60 minutes, until the top is deep golden and a knife inserted in the center comes out mostly clean. Cover loosely with foil if the top browns too fast.

- Cool 1 hour at room temperature, then refrigerate at least 2 hours. If you like, flip the cold slab onto a cutting board so the crunchy layer is on the bottom, and peel off the parchment.

- Beat the softened cream cheese, powdered sugar and vanilla until smooth, then fold in the whipped topping.

- Spread the frosting over the cold pumpkin crunch, sprinkle with the remaining walnuts and cut into 24 squares. Serve cold.

Let us know how it was!To Flip or Not to Flip?
Every pumpkin crunch recipe hits the same debate eventually. Plenty of island families chill it and then flip the whole thing over, so the crunchy part turns into a crust underneath and the frosting goes on the smooth pumpkin side. Other people? Never flip, frost the crunchy top, call it a day. Nobody’s wrong.
Flipping team? Then it has to be fridge-cold, no exceptions, or it cracks and slides everywhere. Cutting board on top of the pan, grab both, one fast turn. Parchment peels right off, and now you see why we bothered lining the pan.

How Do You Know Pumpkin Crunch Is Done?
First, look at the top of your pumpkin crunch recipe. It should be deep golden, with no wet, buttery puddles. After that, give the pan a little nudge. The middle shouldn’t slosh. Poke a knife through to the pumpkin part right in the middle. Mostly clean? Good. My advice is to start peeking around 50 minutes, ovens are all over the place with this one.
Getting too dark before the middle’s ready? Loose foil on top for the last little while.
Pumpkin Crunch Problems (and Fixes)
| Problem | Why | Fix next time |
|---|---|---|
| Dry powdery spots on top | Butter didn’t reach the mix | Drizzle slowly in rows, dab extra butter mid-bake |
| Soggy, wet middle | Underbaked | Bake until a knife comes out clean, cool fully |
| Cracked when flipped | Still warm | Chill at least 2 hours first |
| Frosting melting | Cake not cold enough | Frost only straight from the fridge |
| Too sweet | Used pumpkin pie mix | Buy 100% pure pumpkin |
Easy Twists
Want it extra island-y? Macadamias instead of walnuts. So good. Spice cake mix makes it warmer, butter golden cake mix makes it richer, both are fair game. Also, not a frosting person? Skip it and serve warm squares with a scoop of vanilla ice cream instead. And if you’re feeding a crowd that likes cheesecake more than pie, my pumpkin cheesecake bars are another easy pan dessert, and the pumpkin lush doesn’t even need the oven.
Storing Leftover Pumpkin Crunch
Eggs and milk underneath, cream cheese on top. In other words, this pumpkin crunch recipe needs the fridge. Don’t leave it out more than 2 hours, which is the USDA’s danger zone rule. Covered, it keeps 3 to 4 days, in line with the FoodSafety.gov storage chart.
The freezer’s fine too, however, do it before frosting. Wrap the squares up tight and they’re good for a couple months. Let them thaw overnight in the fridge and frost after. For Thanksgiving, I’d bake it on Tuesday or Wednesday, chill it overnight, and frost it Thursday morning.
Pumpkin Crunch Recipe FAQ
Is pumpkin crunch the same as pumpkin dump cake?
Pretty much, yeah, because it’s the same idea, dry cake mix over a pumpkin custard. The Hawaii version usually adds the cream cheese frosting and is often flipped.
Will it fit in a 9×9 pan?
Not the full batch, no way. Cut everything in half. Otherwise it’s a soupy middle and butter dripping on your oven floor.
No evaporated milk?
Grab half-and-half. Same amount. The pumpkin layer comes out a touch softer, that’s about it.
Nut allergy in the family?
Just skip them. Toasted coconut is a fun stand-in if you miss the crunch.
Should I serve it warm or cold?
Frosted, it’s served cold. Without frosting, a warm square with ice cream is honestly hard to beat.
