At our Thanksgiving, the sweet potato casserole is gone before anyone’s even sharpened the carving knife. Every year. This is the one: roasted sweet potatoes whipped up with butter, a bit of brown sugar, vanilla and some warm spice, then a crunchy brown sugar pecan topping on top. Sweet, yes. Candy-sweet, no. And you can do most of it two days early, which, on Thanksgiving week, is everything.

The quick version, if you’re planning your menu:
| Quick facts | |
|---|---|
| Total time | About 2 hours 10 minutes (mostly hands-off roasting) |
| Servings | 10 (one 9×13-inch dish) |
| Difficulty | Easy |
| Key ingredients | Sweet potatoes, butter, brown sugar, eggs, pecans |
| Make ahead | Yes, assemble up to 2 days early |
| Topping | Pecan crumble, marshmallows, or half and half |
Got stuck bringing a side this year? Bring this. Hard to mess up, survives a car ride, and somebody will ask you for the recipe.
Sweet Potato Casserole Recipe Card

Sweet Potato Casserole with Pecan Topping
Ingredients
- 3 lb sweet potatoes (1.36 kg, about 4 large or 7 to 8 small), scrubbed
- 4 tbsp unsalted butter (57 g), melted, plus more for the dish
- 1/3 cup packed brown sugar (67 g), light or dark
- 3/4 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 large eggs beaten
- 1/2 cup half-and-half (120 ml), or whole milk
- 1 tsp pure vanilla extract (5 ml)
- 1/2 cup packed brown sugar (107 g)
- 1/3 cup all-purpose flour (42 g)
- 1/4 tsp kosher salt
- 4 tbsp unsalted butter (57 g), melted
- 1 1/4 cups pecans (140 g), chopped
Method
- Heat the oven to 400°F (205°C). Prick the sweet potatoes with a fork, place them on a foil-lined sheet pan and roast 50 to 60 minutes, until very soft when squeezed (35 to 45 minutes for small potatoes).
- Let the sweet potatoes cool about 15 minutes, then slit the skins and scoop the flesh into a large bowl. You should have about 4 cups.
- Lower the oven to 350°F (175°C) and butter a 9×13-inch baking dish.
- Add the melted butter, brown sugar, salt, cinnamon and nutmeg to the sweet potatoes and mash or beat with a hand mixer until smooth.
- Beat in the eggs, half-and-half and vanilla until fully combined. Spread the filling evenly in the baking dish.
- For the topping, stir the brown sugar, flour and salt together, pour in the melted butter, then fold in the chopped pecans until it looks like wet sand.
- Scatter the pecan topping over the filling in small clumps, all the way to the edges.

- Bake 30 to 35 minutes, until the edges bubble, the topping is deep golden and the center no longer jiggles (160°F / 71°C).
- Let the casserole rest 10 minutes before serving.

Let us know how it was!Why Roasted Sweet Potatoes Make a Better Casserole
Most recipes say peel, cube, boil. I did exactly that for years and never loved it. Boiled sweet potatoes suck up water like a sponge, so the filling came out kinda loose and a little blah.
Then I tried roasting them whole. Huge difference. Because the skin stays on, all that steam stays inside and the flesh turns soft and almost jammy. A little of the sugar usually oozes out too and goes sticky and dark on the foil, which I used to think was a mess I’d have to scrub, but nope, that’s basically where the flavor comes from.
Bonus: you need less sugar. Roasted ones are sweeter all by themselves, so the filling only gets 1/3 cup brown sugar and the topping does the rest. It still tastes like sweet potatoes! Not like pie wearing a side-dish costume.
Also no peeling raw, slippery potatoes. After roasting, the skins just slide off.
Sweet Potato Casserole Ingredients and Swaps
Two little lists here, filling and topping. Nothing weird.

- Sweet potatoes: the orange-fleshed kind with copper skin, about 3 pounds. In most U.S. stores they’re labeled “yams,” but they’re sweet potatoes. True yams are a different, starchy root you rarely find outside specialty markets.
- Butter: unsalted, melted, for the filling and the topping.
- Brown sugar: light or dark. Dark gives a deeper molasses taste.
- Eggs: two large eggs set the filling so it slices like a soft custard.
- Milk or half-and-half: makes it creamy and fluffy.
- Vanilla, cinnamon, nutmeg and salt: small amounts, big difference.
- Pecans and flour: for a topping that actually crunches.
Need to change something? This is what happens with each swap:
| Ingredient | Swap | What changes |
|---|---|---|
| Fresh roasted sweet potatoes | 2 (29 oz) cans cut sweet potatoes, drained | Faster, softer, slightly sweeter; skip roasting |
| Half-and-half | Whole milk or canned coconut milk | Milk is lighter; coconut adds faint coconut flavor |
| Eggs | Leave them out | Softer, spoonable filling instead of sliceable |
| Pecans | Walnuts or oats | Walnuts more bitter; oats give a crisp-style topping |
| Butter | Plant-based butter sticks | Same texture, makes it dairy-free with coconut milk |
| Brown sugar (filling) | Maple syrup, 3 tbsp | Maple flavor, slightly looser filling |
Can You Use Canned Sweet Potatoes?
Yep, totally fine. Two 29-ounce cans, drained really well, mashed. They come packed in syrup though, so drop the filling sugar to just 2 tablespoons or it gets cloying. Shortcut fans, our canned sweet potato recipes have more ideas.
How to Make Sweet Potato Casserole Step by Step
Amounts are up in the card. This part’s more about what you should be seeing as you go.
- Poke the sweet potatoes a few times with a fork (one exploded in my oven once, never again) and roast them on a foil-lined pan at 400°F (205°C) for 50 to 60 minutes. Squeeze one with an oven mitt. Should feel like a water balloon.
- Walk away for 15 minutes. Seriously, they’re lava inside.
- Split them open and scoop out the orange part. Around 4 cups, give or take, skins go in the compost.
- Oven drops to 350°F (175°C). Grease the 9×13 now, future you will be glad.
- In goes the butter, brown sugar, salt, cinnamon, nutmeg. I go with a hand mixer for a fluffy filling; my mom always used a fork and hers was lumpy and perfect.
- Sneak a taste here if you’re worried about sweetness (no eggs yet, so it’s safe), then beat in the eggs, half-and-half and vanilla.
- Topping: brown sugar, flour and salt in a bowl, melted butter over it, pecans folded through. Wet sand with nuts. That’s the look.
- Clumps all over, all the way to the corners, because the corners are the best part and people will fight you for them.
- Bake 30 to 35 minutes, till the edges bubble and the middle stops wobbling when you jiggle the pan. Ten minutes of rest, and then go ahead.

If you’ve never been put on side-dish duty before, you picked a good one, because the oven handles the roasting while you get on with everything else and there’s really no technique to stress about.
Pecan Topping or Marshmallows?
Ah, the great family fight. Pecan people want buttery crunch. Marshmallow people (usually under 12) want gooey toasty puffs. Nobody’s wrong.
My peace treaty: half and half. Pecan topping on one side, bake like normal, then for the last 5 minutes scatter 1 1/2 cups mini marshmallows over the bare side. And please don’t wander off during those five minutes, I’ve burned more marshmallows than I’d like to admit.
Sweet Potato Shortage Thanksgiving 2026: What to Know
Quick warning if you shop last minute. Back in August 2026, Forbes reported sweet potato farmers are on their third rough season in a row, going back to Hurricane Helene in 2024. North Carolina grows most of ours, and yields there dropped 20 to 30%. Dry weather also means lots of little potatoes, not many big ones.
So buy by weight, not by count. Only small ones at your store? Grab 3 pounds (7 or 8 smallish ones) and cut the roasting to 35 to 45 minutes. Prices are supposed to stay up through the holidays, so I’m shopping a week or two early this time.
Not cooking at all this year? No judgment. Aldi’s frozen Sweet Potato Casserole with a praline topping starts rolling into stores October 28, 2026, at $4.99. Only five servings though, so a big crowd still needs the real thing.
Thanksgiving lands on Thursday, November 26 this year. Roast your potatoes Monday or Tuesday and thank me Thursday.
Sweet Potato Casserole Mistakes to Avoid
When it goes wrong, it’s usually soggy potatoes or pulling it out too soon. Fixes:
| Problem | Likely cause | Fix |
|---|---|---|
| Watery filling | Boiled potatoes, not drained | Roast instead, or mash and cook 5 minutes in a dry pot |
| Stringy texture | Hand-mashed fibers | Beat with a hand mixer and wipe fibers off the beaters |
| Soggy topping | Topping added too early, made ahead | Store topping separately, add right before baking |
| Topping too dark | Oven runs hot | Tent loosely with foil after 20 minutes |
| Too sweet | Canned potatoes in syrup + full sugar | Cut filling sugar, add a pinch more salt |
How to Make Sweet Potato Casserole Ahead
Oven space on Thanksgiving is a war zone, so I prep this early. My game plan:
| When | What to do | How to store |
|---|---|---|
| Up to 3 days ahead | Roast and scoop the sweet potatoes | Covered bowl in the fridge |
| Up to 2 days ahead | Mix the filling and spread it in the dish | Wrapped tightly, refrigerated |
| Up to 2 days ahead | Mix the pecan topping | Separate airtight container, refrigerated |
| Thanksgiving Day | Add topping, bake 40 to 45 minutes | Let the dish sit out 30 minutes first |
Straight from the fridge it’ll want about 10 extra minutes. There are eggs in there, so the middle should hit 160°F (71°C), per the FoodSafety.gov temperature chart for egg dishes.
Sweet Potato Casserole Variations
Got the basic one down? Play around a little.
Bourbon Sweet Potato Casserole
I add about 2 tablespoons of bourbon along with the vanilla for the grown-ups’ table. The alcohol cooks off in the oven and what’s left is this warm, caramel kind of flavor that goes really well with the pecans.
Orange Sweet Potato Casserole
A teaspoon of orange zest in the filling wakes the whole thing up. Really nice next to a heavy plate of turkey and gravy.
Less-Sweet Sweet Potato Casserole
My aunt makes hers with no sugar in the filling at all and just keeps the pecan topping, plus an extra pinch of salt and some black pepper. Honestly it’s a smart move when there are already three pies lined up on the counter.
Sweet Potato Casserole in a Crockpot
Oven full? Spread the filling in a greased 6-quart slow cooker, LOW 3 hours or HIGH 1 1/2 to 2. Toast the topping separately on a sheet pan, 350°F, 8 to 10 minutes, and sprinkle it on right before serving. Otherwise it goes soggy in the crockpot steam.
What to Serve With Sweet Potato Casserole
Turkey, stuffing, green beans, cranberry sauce, this. That’s the plate. A forkful of sweet potato with a bit of turkey and gravy is my favorite bite of the whole day.

Pour rich turkey gravy on the turkey, keep the sweet potatoes next to it, and let salty and sweet do their thing. And it’s not just a November thing, I make it alongside baked ham, a roast chicken or even pork chops on a regular Sunday.
How to Store and Reheat Sweet Potato Casserole
Leftovers into the fridge within 2 hours. Covered, 3 to 4 days.
For just a plate, the microwave does it in a minute or two. The whole dish? Foil on top and into a 350°F (175°C) oven for maybe 20 to 25 minutes, peeling the foil back for the last five so the pecans get their crunch back. You want it steaming hot in the middle, about 165°F (74°C).
It freezes, up to 3 months, wrapped tight. Thaw overnight in the fridge. The pecans lose some crunch in the freezer, so I toss a handful of freshly toasted ones on top when reheating. Cheating, but it works.

Sweet Potato Casserole FAQ
Can I make sweet potato casserole the night before?
Yes! That’s honestly how I do it most years. Filling goes in the dish, covered, in the fridge, and the topping waits in its own container until right before it bakes. Cold casserole needs about 10 more minutes in the oven.
Do you boil or bake sweet potatoes for casserole?
Bake (well, roast) them, if you ask me. Boiling works, sure, but boiled ones take on water and the filling slumps. Whole, skins on, 400°F (205°C) for 50 to 60 minutes and you get a thicker, sweeter base.
Why is my sweet potato casserole runny?
Usually one of two culprits. Watery boiled potatoes, or you got hungry and pulled it early (been there). Give it until the sides bubble and the center sits still, and roast the potatoes next time. Oh, and both eggs, they’re what sets it.
How many sweet potatoes do I need for a 9×13 casserole?
About 3 pounds. That’s 4 big ones or 7 to 8 small, and it gives you around 4 cups mashed, just right for a 9×13.
Should sweet potato casserole be covered when baking?
Nope, leave it bare or the pecans steam instead of crunch. My oven runs hot, so sometimes I’ll drape a sheet of foil over it near the end when the nuts start getting too dark.
What’s the difference between yams and sweet potatoes?
At most U.S. stores, the “yams” are really just orange sweet potatoes. Actual yams look like tree bark outside and are white and starchy inside. For this recipe, grab either one labeled “yam” or “sweet potato,” same result.
Last tip, and it’s one I never skip anymore: toast the pecans in a dry pan for about 5 minutes before they go into the topping. It’s such a small thing, but they taste so much nuttier.

So go grab your sweet potatoes this week, before the good ones vanish. If you end up making it, I’d love it if you left a star rating on the card, and do tell me down in the comments whether your house is team pecan or team marshmallow. Pinning it to your Thanksgiving board helps too, so it’s easy to find again. And while you’re menu planning, our make-ahead Thanksgiving appetizers might save you some stress too.
