Ina Garten Egg Salad Recipe (New Truffled Version + Classic Tartines)

97

So, Ina did it again. The newest Ina Garten egg salad recipe is a Truffled Egg Salad, and honestly it’s barely a recipe at all. Nine eggs, a little mayo, chives, and a spoon of white truffle butter smashed into a couple of the yolks. That last bit is the whole trick.

She dropped it on her Substack on September 30, 2026. The book, Simply Ina, isn’t even out till October 20. Didn’t matter. By the next morning everybody and their aunt was googling “where do I even buy truffle butter.” Fair question! We’ll get to it.

And if truffle isn’t your thing, her older egg salad, the Egg Salad Tartines with sweet relish and grainy mustard, is right here too.

Why Her Egg Salad Tastes Better Than Yours (Sorry)

Most of us make egg salad on autopilot. Chop, mayo, mustard, salt, eat over the sink. Ina’s version isn’t fancy, it’s just more careful.

First, she pulses the eggs in a food processor. Not blends. Pulses. Five, six taps, done. The whites stay chunky and you don’t get baby food. Then two of the yolks get pulled aside and mashed up with the butter, kind of like a tiny yolk spread, and that’s what makes it taste rich. Bonus: less mayo needed.

Oh, and she always says “good” mayonnaise. She means the real full-fat stuff, Hellmann’s (or Best Foods out west) or Duke’s. Light mayo makes it watery. Don’t do it.

Feeding kids, or a crowd that inhales deviled eggs? Go classic. Want people to ask “wait, what’s in this?” Make the truffle one.

The Truffle Butter Problem

Here’s the annoying part. Most grocery stores don’t carry white truffle butter. Ina orders hers from Urbani online and keeps a tub in the freezer, where it lasts for ages. Some Whole Foods and Italian markets have it near the fancy cheese, but it’s hit or miss.

Can’t find any? Okay. Soft butter (1 1/2 tablespoons) plus a tiny splash of white truffle oil, like 1/4 teaspoon, plus salt. Careful here, truffle oil can go from “ooh” to “is that… candle?” really quick. Got truffle salt in the cupboard? Use regular butter and salt the egg salad with that. Hate truffle? Totally allowed. Plain butter and a dab of Dijon in the yolks still gives you that creamy thing, just without the mushroomy funk.

Eggs That Actually Peel

Nothing ruins egg salad faster than eggs that rip apart when you peel them. Steaming them fixes most of that, at least in our kitchen. About an inch of boiling water, steamer basket, cold eggs in, lid on, 13 minutes on a timer. Ice bath right after. Leave them a good 10 minutes or so. Then crack the ends, roll ’em on the counter and the shell should slide off, especially if you peel under a little running water.

Older eggs peel better than super fresh ones, by the way. Eggs that sat in your fridge for a week are perfect here. Whatever method you use, cook them until both white and yolk are firm, which is what the USDA recommends, and use hard-cooked eggs within a week.

Ingredients

  • 9 large eggs hard-boiled and peeled
  • 1 1/2 tablespoons white truffle butter softened, or see notes for swaps
  • 1/3 cup good mayonnaise such as Hellmann’s or Duke’s
  • 2 tablespoons fresh chives minced, or scallion greens
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 4 slices ciabatta or whole grain bread toasted, optional

Method

  1. Steam the eggs for 13 minutes (or boil them your favorite way until fully firm), then chill in ice water for 10 to 15 minutes. Peel and pat dry.
  2. Separate the yolks from 2 of the eggs. In a medium bowl, mash those 2 yolks with the truffle butter using a fork until smooth.
  3. Put the 7 remaining whole eggs and the 2 reserved whites in a food processor. Pulse 5 or 6 times, just until coarsely chopped. Don’t purée.
  4. Add the chopped eggs, mayonnaise, chives, salt and pepper to the yolk mixture. Fold gently until just combined.
  5. Chill for 20 minutes, taste and adjust the salt. Spread thickly on toasted bread and sprinkle with more chives, or serve on its own.

Tips for This Ina Garten Egg Salad Recipe

A few small things matter more than you’d think. Pat the peeled eggs dry, because water on the whites thins out the mayo. Watch the food processor like a hawk, if it starts looking like paste you overdid it. (No food processor? A pastry cutter or even a fork does the job, just slower.) When you mix, fold. Gently. Ina’s words were “just mixed” and she’s not wrong.

Give it 20 minutes in the fridge before tasting. Weird thing about cold food, it always wants a little more salt than you think. But the truffle butter is salty already, so hold off on salting until the end. And toast the bread. Always. Soft bread plus egg salad equals sad soggy lunch in about five minutes.

Making the Classic Tartines Instead

This one’s the old-school picnic version. Lose the truffle butter, add a few spoonfuls of sweet relish and some grainy mustard, throw in dill where the chives were, and pile it up on toasted whole grain bread. Ina’s exact amounts are on the Barefoot Contessa site. A tartine is just an open-faced sandwich, so cut each one in half on the diagonal and suddenly it’s a party platter.

What Goes With It

Soup and sandwich is the obvious answer, and our roasted tomato soup is a really good match. A crunchy green salad with our creamy honey mustard dressing works too. Chips and a pickle spear, if we’re being real.

Doing brunch? Tiny truffle egg salad toasts beside a platter of vanilla cinnamon French toast is a pretty great look. Meal prepper? The high-protein chicken salad holds up in the fridge just as long. And for a bigger party spread, put these out next to a Knorr spinach dip bread bowl.

How Long Will It Keep?

Figure 3 to 4 days, lid on, in the fridge. On the counter? 2 hours tops, and only an hour if it’s a hot day or you’re outside at a picnic. Freezing is a no: the whites go rubbery and the mayo splits. Freeze the leftover truffle butter instead.

Nutrition-wise it’s a decent protein lunch. A large egg has about 6 grams of protein (USDA FoodData Central), so a serving lands somewhere around 13 or 14 grams. Want it lighter? Swap half the mayo for plain Greek yogurt. You’ll still taste the truffle.

Cooking for a crowd instead of a picnic? Ina’s one-pot Ina Garten jambalaya with shrimp, chicken and andouille feeds 8 from a single Dutch oven.

FAQ

What’s Ina Garten’s newest egg salad recipe?

Truffled Egg Salad, from her 2026 cookbook Simply Ina. It’s 9 hard-boiled eggs, white truffle butter, mayo, chives, salt and pepper.

What’s the secret ingredient?

In the new one, white truffle butter mashed into the yolks. In her classic tartines, it’s sweet relish plus whole-grain mustard.

Where do I buy truffle butter?

Ina orders Urbani online. Some specialty stores and Whole Foods locations carry it near the cheese. It freezes well, so one tub goes a long way.

Does Ina use a food processor?

Yep. Just a few quick pulses so the eggs stay chunky.

Why does my egg salad get watery?

Usually wet eggs, light mayo, or salting too early. Dry the eggs, use full-fat mayo, and salt near serving time.

Can I make it ahead?

Sure, up to a day. Keep it covered in the fridge and give it a gentle stir before serving.

One last thing: got a bit of truffle butter left? Melt it over hot popcorn. Thank us later.
