Method
Preheat oven to 400°F (200°C) or prepare air fryer.
Coat chicken with cornstarch and place on baking tray.
Bake for 18–20 minutes or air-fry for 12–15 minutes until golden.
In a skillet, heat olive oil and sauté garlic, ginger, onion, and peppers.
Add pineapple chunks and cook for 2 minutes.
Whisk sauce ingredients together and pour into skillet.
Simmer until thickened, then add cooked chicken.
Toss well and serve warm.
