Method
- Preheat oven to 400°F (200°C) or prepare air fryer.

- Coat chicken with cornstarch and place on baking tray.
- Bake for 18–20 minutes or air-fry for 12–15 minutes until golden.
- In a skillet, heat olive oil and sauté garlic, ginger, onion, and peppers.
- Add pineapple chunks and cook for 2 minutes.

- Whisk sauce ingredients together and pour into skillet.
- Simmer until thickened, then add cooked chicken.
- Toss well and serve warm.

Notes
- Serve with brown rice, quinoa, or cauliflower rice.
- Adjust sweetness by adding less or more honey.
- For extra spice, add chili flakes.
- Can also be adapted into a sweet and sour chicken wings recipe.
