Ingredients
  

  • 500 g chicken breast diced
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 onion sliced
  • 1 cup pineapple chunks
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • For the Sauce:
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon tomato paste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Method
 

  1. Preheat oven to 400°F (200°C) or prepare air fryer.

  2. Coat chicken with cornstarch and place on baking tray.
  3. Bake for 18–20 minutes or air-fry for 12–15 minutes until golden.
  4. In a skillet, heat olive oil and sauté garlic, ginger, onion, and peppers.
  5. Add pineapple chunks and cook for 2 minutes.

  6. Whisk sauce ingredients together and pour into skillet.
  7. Simmer until thickened, then add cooked chicken.
