  • 1 large head cauliflower cut into florets

Method

  1. Preheat the oven to **425°F (220°C)** and line a baking sheet with parchment paper.

  2. Wash the cauliflower, dry it thoroughly, and cut it into evenly sized florets.
  3. Place the florets in a large bowl. Add olive oil, cumin, smoked paprika, coriander, garlic, salt, and black pepper. Toss until evenly coated.
  4. Spread the cauliflower in a single layer on the prepared baking sheet. Avoid overcrowding the pan.
  5. Roast for approximately **20–25 minutes**, turning once halfway through, until the edges are golden brown and the florets are tender.
  6. Remove from the oven and immediately drizzle with fresh lemon juice.
  7. Sprinkle with chopped parsley and capers, if using.
  8. Serve warm as a side dish or alongside your favorite main course.
