Boil mirlitons until tender, peel, seed, chop, and drain.
Preheat oven to 350°F (175°C) and grease casserole dish.
Sauté onions, celery, bell pepper, and garlic in butter. Season with salt, pepper, and Creole spices.
Mix mirlitons, vegetables, breadcrumbs, eggs, cheese, and optional protein in a bowl.
Transfer to casserole dish, top with extra breadcrumbs or cheese.
Bake 35–45 minutes until set and lightly browned.
Rest 10 minutes before serving.
