½cupsour cream120 g, room temperature
¾cupParmesan60 g, finely grated
2cupsbaby spinach60 g, packed
⅓cupsun-dried tomatoes in oil40 g, chopped, optional

Method
Pat the chicken dry and season with salt and pepper. Brown in 1 tbsp butter in a Dutch oven over medium-high heat, about 4 minutes per side. Transfer to a plate.
Reduce heat to medium. Add the remaining butter, onion, carrots and celery and cook 7 to 8 minutes, scraping up browned bits, until soft. Add the garlic for the last minute.
Stir in the flour and cook 1 minute. Slowly whisk in the broth. Add the Italian seasoning and return the chicken. Simmer, partly covered, 15 minutes.
Remove the chicken and shred with two forks. Bring the soup to a boil, add the pasta and cook 8 to 9 minutes, stirring occasionally, until tender. Return the chicken.
Reduce heat to low. Whisk the cream cheese and sour cream with a ladle of hot broth until smooth, then stir into the soup. Stir in the Parmesan a handful at a time. Do not let the soup boil.
Stir in the spinach and sun-dried tomatoes until wilted. Add the lemon juice, adjust the salt and serve hot.
