  • 8 oz low-sodium macaroni
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups low-sodium milk
  • 1 cup low-sodium sharp cheddar cheese shredded
  • ¼ cup low-sodium mozzarella or Swiss cheese shredded
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp paprika optional
  • Optional: herbs like parsley thyme, or chives

Method
 

  1. Cook the pasta in unsalted boiling water until al dente. Drain and set aside.
  2. Make the roux: Melt butter in a saucepan, whisk in flour, and cook for 1 minute.
  3. Add milk: Slowly whisk in milk until sauce thickens.
  4. Add spices and cheese: Stir in garlic powder, onion powder, paprika, pepper, and cheeses until smooth.
  5. Combine: Mix cooked macaroni into the sauce until fully coated.
  6. Optional baking: Transfer to a baking dish, top with extra cheese, and bake at 350°F (175°C) for 10–15 minutes until golden.

  • Use sharp or aged cheese for more flavor without adding salt.
  • Slightly undercook pasta to absorb the sauce better.
