Preheat oven to 200°C (400°F).
Wash and dry the Honey Gold potatoes. Cut larger ones in half.
In a large bowl, mix potatoes with olive oil (or butter), garlic, salt, pepper, and seasonings.
Spread potatoes evenly on a baking sheet in a single layer.
Roast for 25–35 minutes, flipping halfway through, until golden and crispy.
Remove from oven and sprinkle with fresh parsley if desired.
Serve warm as a side dish.

For extra crispiness, don’t overcrowd the baking tray.
You can parboil potatoes for 5–7 minutes before roasting for a softer inside.
Add parmesan cheese at the end for extra flavor.
Works great in an air fryer at 200°C for ~18–22 minutes.
