Method
Step 1 – Activate the Yeast
Mix the warm milk, sugar, and yeast in a bowl. Let stand for 5–8 minutes until foamy.
Step 2 – Make the Dough
Add the melted butter, egg yolks, vanilla, and salt. Mix well, then gradually add the flour until a soft dough forms.
Step 3 – Knead
Knead for 5 minutes in a stand mixer or 8 minutes by hand until smooth and elastic.
Step 4 – First Rise
Place the dough in a lightly greased bowl, cover, and let rise for about 1 hour or until doubled in size.
Step 5 – Shape the Doughnuts
Roll the dough to ½-inch thickness and cut using a doughnut cutter. Place on parchment paper and let rise again for 20–25 minutes.
Step 6 – Fry
Heat oil to 350°F (175°C). Fry 2–3 doughnuts at a time for about 60–90 seconds per side until lightly golden.
Step 7 – Prepare the Glaze
Whisk together powdered sugar, milk, and vanilla until smooth.
Step 8 – Glaze
Dip the warm doughnuts into the glaze, place on a wire rack, and allow the glaze to set for 5 minutes before serving.
