Ingredients

  • 500 g beef liver thinly sliced
  • 2 large onions thinly sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • ½ cup red wine or beef stock optional, for pan sauce
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Equipment

Method

  1. Prepare the liver: Rinse and pat dry. Optional: soak in milk 20–30 minutes to reduce bitterness.
  2. Caramelize onions: Heat olive oil + butter over medium heat. Add onions with a pinch of salt and cook 10–12 minutes until soft and golden. Remove and set aside.
  3. Cook beef liver: In the same pan, sear liver slices 1–2 minutes per side over medium-high heat. Season with salt, pepper, and smoked paprika.
  4. Create the sauce: Add garlic, soy sauce, balsamic vinegar, and optional red wine or stock. Simmer 2–3 minutes, scraping up browned bits.
  5. Combine & serve: Return onions to the pan, stir gently with liver and sauce. Garnish with parsley and lemon wedges. Serve hot.
